There are dozens and dozens of recipes that call for eggs, and this usually leaves non-egg lovers in a bind. But not to worry, applesauce is a quick and easy replacement for vegans and others who don’t support the egg industry.
The ingredient can be used as a replacement in a variety of baked goods and pretty much any dish that calls for eggs. Not only that, substituting applesauce for eggs reduces the amount of cholesterol in the overall meal. Another benefit is that applesauce makes baked goods moister than eggs.
To substitute applesauce for eggs in a recipe, use 1/3 cup of applesauce for each egg. If raising agents such as baking soda are used in the recipe, then a 1/4 cup of applesauce plus 1 teaspoon of the raising agent will give the desired result.
It’s important to note that applesauce will add some flavour and natural sweetness, so one must make sure that it’s compatible with the other ingredients in a recipe.
For those who may not like applesauce or have the ingredient on hand, other common vegan foods such as pureed bananas, soy yogurt, tofu, flax seeds can be used as egg substitutes.
