I honestly can say that shortbread cookies have got to have little pieces of crack in them, WHY ARE THEY SO ADDICTIVE. These are some simplistic cookies, but man o man, they are just AMAZING, especially the ones with a little bit of jam in them!

Yes, you can store them in the freezer and they hold up pretty well. So, if you have a big batch and you haven’t eaten them all off,I am going to show you how to freeze them below.
How to Freeze Shortbread Cookies
Freezing shortbread cookies is pretty easy and if you follow the steps below, you will be up and running in no time.
Step 1
Bake your cookies and when finished allow them to cool.
Step 2
What you will now do is a get one of those freezer storage containers. You are going to place the the shortbread cookies beside each other until the bottom of the container is full.
Step 3
You are now going to take parchment/wax/freezer paper and place it on top of the first layer. You are now going to fill up the second layer with cookies.
Step 4
Repeat the steps until the the cookies are finished or the container is full.
Step 5
Once you have finished, you will now place the parchment/wax/freezer paper on the top layer and make sure the air tight/freezer is closed.
Step 6
Label the container with cookies, so you know when you had put them inside of the freezer. Frozen shortbread cookies can last up to 6 months in the freezer.
So How Do You Eat Them out the Freezer?
Whenever you are ready to enjoy your frozen shortbread cookies, you can take them out and allow them to defrost till they are back to room temperature. If you want to enjoy them warm, you could either throw them in the microwave, or do a quick reheat in the oven.
